• 20gr yeast
• 3dl warm milk
• 30gr sugar
• 500gr flour
• ½ teaspoon salt
• 4 egg yolks
• 100gr butter
• Oil for frying
• Marmalade (optional)

Dissolve the yeast in 3dl of warm milk, add 30gr of sugar and a tablespoon of flour then cover the bowl and leave in a warm place to ferment. In a large bowl add the remaining flour with ½ of salt, 4 egg yolks, 100gr of whipped butter and finally the yeast so you can knead the dough. The dough is ready when it doesn’t stick to the bowl. Leave in a moderately warm place to rise for an hour and it should double in size. On a surface with flour stretch the dough into a rectangle 2cm thick. Spread marmalade on one half of the dough and cover with the other side. Donuts are made with a mold and should be left to stand for 15 minutes then can be fried in boiling oil. Finally sprinkle with powdered sugar.
