All you need is to add something sour to an over salted dish. Depending on the food you can add lemon juice, vinegar or tomato sauce.
Another option is to add a little bit of baking soda that will absorb the excess salt. Also, you can add a whole peeled potato to an over salted dish, which will eat the excess salt when it is cooking.
